*Summary:* An Airport Lanes Grill Cook has the responsibility for preparing delicious, high-quality and timely food products for our Guests.
The cooks create and maintain a superior food product and an atmosphere of friendliness, quality, and fun in the kitchen and restaurant.
*Duties and Responsibilities:*
· Prepare delicious meals for our Guests.
· Prep to specification and prep level for the shift.
· Set up workstation using schematic for organization and amounts of product.
· Select appropriate knives, hand tools, utensils and equipment to portion, cut, slice, broil, roast, carve, skewer and garnish product.
· Regularly inspect product specification, level, freshness and taste.
· Provide a guest “chit” for each transaction.
· Rotate, label and date all food product and inform management about any product that has expired.
Document appropriately.
· Stock all product in refrigerators, on shelves and in freezers per schematic.
· Maintain and Control Product cost.

*Skills/Experience:*
* High School Diploma or equivalent
* Minimum 1-year work experience in high-volume kitchen
· Be a team player with the willingness and ability to assist as needed in other departments.
* Prior experience in related food and beverage service and food preparation positions
* Thorough experience with hot and cold food preparation
* Good working knowledge of accepted sanitation standards and health codes
* Ability to use slicers, mixers, grinders, food processors, etc.
* Able to handle work in a fast-paced environment
* Strong problem solving and communication skills
* Exceptional time management skills
* Willingness to comply with all food safety procedures
*Job Activities:*
· Maintain thorough knowledge of all food menus and proactive in staying current on all new menu items and specials.
· Maintain above average concern for both personal and professional cleanliness and hygiene.
· Ensure all equipment is in complete working order.

· Follow state and local health department requirements and all cleanliness and safety guidelines and standards.
· Inspect food contact surfaces of equipment / utensils visually to ensure that surfaces are clean
· Ensure the regular change of water and interior parts of sinks are clean and free of debris.
Drain and refill the dish machine as needed to keep the water clean (discoloration, loss of temperature, etc.
).
· Monitor the temperature of water and ensure temperature meets safety standards and guidelines.
· Ensure that food contact surfaces reach a surface temperature of 160 °F or above if using hot water to sanitize.
Check the temperature gauge as well as a secondary check using a heat sensitive tape or maximum registering thermometer to ensure that appropriate temperatures for sanitizing are reached.
· Maintain an above standard level of cleanliness and organization of the kitchen and prep areas.
· Check weekly cleaning list for project for the shift.
· Maintain above average concern for both personal and professional cleanliness and hygiene.
· Ensure all equipment is in complete working order.

· Must be available to work all shifts including nights, weekends and holidays.
