Purpose: The Food & Beverage Manager is primarily responsible for planning and managing the Restaurant(s), Room Service and Lounge(s) in order to achieve customer satisfaction, quality service, compliance with corporate/franchise policies and procedures and federal, state and local regulations while meeting/exceeding financial goals.
This position is also responsible for the short-term planning and managing the operations of the Restaurant(s), Room Service and Lounge(s), recommends promotional ideas and procedural changes, prepares forecasts, implements, monitors and controls the budgets for the various outlets, and ensuring staff is working together as a team to ensure optimum service and that guests needs are met.
This role manages the resort’s food and beverage services team ensuring compliance and that Performance Hospitality’s high standards of service are met.
Essential Functions: Outlets: Ensure the hotel maintains the highest standards of food and beverage quality, guest service, cost control and consistency in accordance with the hotel’s expectations.
Ensure that all purchasing efforts are streamlined and follow the company requisite requirements; ensure that quotes are always received and reviewed accordingly and that we constantly strive to ensure that we have the best pricing for all food and beverage items.
Constantly work on promoting the hotel creatively in conjunction with the marketing team and in accordance to the hotel operations schedule and events calendar.
Market the Food and Beverage outlets; develop and manage the implementation of menus, package deals, promotions, displays, decorations and presentations within corporate guidelines to capture more in-house guests and a larger share of the local market to meet/exceed sales and financial goals and objectives.
Implement and manage all company programs (company/franchise) to ensure compliance with the SOPs; to include safety and sanitary regulation, all federal, state and local regulations to ensure optimal levels of quality service and hospitality are provided to the guest.
Monitor dining rooms for seating availability, service, safety, and well-being of guests.
Manage the maintenance/sanitation of the food and beverage areas and equipment in the hotel to comply with regulations and ensure quality service.
Complete opening and closing duties including setting up necessary supplies and tools, cleaning all equipment and areas, locking doors, etc.
Inspect storage areas for organization.
Banquet : Understand Banquet Event Orders to safely, efficiently set up and break down events using in-room clearing and aisle tray breakdown buffet procedures.
Help Lead Banquet Server set up and break down buffet or other special food service tables and equipment with the ability to lift and carry up to 20 pounds.
Efficiently complete prep and side work to enable focused guest care and maintain an orderly, clean station during events.
Must be able to handle a variety of guest service situations professionally in a manner consistent with company standards.
Actively participate in Banquet Order Event meetings; review all banquet orders timely and routinely to ensure a complete understanding of guest needs; Ensure appropriate staff, equipment and supplies are on hand to satisfy guest needs Resolve customer complaints, as appropriate, to maintain a high level of customer satisfaction and quality.

Bachelor’s degree preferred.
A minimum of five (5) years of full service, high quality resort, or hotel experience in food & beverage, supervisory, service techniques, guest interaction, vendor relations, Excellent communication skills required, both verbally and in writing, to provide clear direction to the service teams.
